Staple Foods

Let's Talk About 
"Staple" Foods

What are "Staple" Foods? I am glad you asked! Staple foods are those basic foods that can be combine a million different ways! 

Growing up I loved to watch What Not to Wear on TLC. The take away message from  that show is you don't need a closet full of clothes to look great. All you need are a few staple pieces such as a black dress, blazer, white button down, and you get the picture. Each piece by its self doesn't look impressive but when you mix the pieces together you get a great outfit. The same goes for food! All you need are the basics and you always have a great meal.

Let's Dive on In!

1. Meat
     Whether it is canned chicken or fresh from the butcher, meat is something you should always have in the house. I always have canned chicken on hand, but I also like to keep Boar's Head deli meat. I usually go to Publix and get whatever meat is on special. (This way I try a lot of different flavors.) The third meat I try to keep on hand is hormone free chicken breasts. (Since these can be frozen, I usually buy several at a time.) Between the three I always have protein for my dishes.
     Here are some meats I also suggest: Lean ground hamburger meat, frozen fish or shrimp, tuna, sausage, and bacon.

2. Cheese
     Cheese is an amazing thing to keep on hand. You can eat it by itself or add it to a dish. There are actually many wonderful dishes that just involve meat and cheese. I keep deli slice cheese of some sort at all times. Once again, I recommend Boar's Head. Obviously the type of cheese is up to the tastes of you and your family.

3. Eggs
     The incredible edible egg is oh so true! An egg is diverse in its cooking methods and is full of wonderful protein  Whether you keep boiled eggs or fresh eggs, they are defiantly worth keeping in your refrigerator.

4. Veggies
     Last but not least we have have veggies! Veggies are the one thing that will tie all your ingredients together and give a unique blend of flavors! The same dish made with different veggies will taste brand new. I like to have bell peppers, onions and broccoli, but the options are far more vast than that. Keeping veggies on hand will keep your food from being bland. (hahaha I crack myself up) 


The dishes you can make with just these four "Staple" Foods are endless! Have fun switching up veggies or cheeses and see how they make an old dish take brand new!
With these foods on hand, there will always be a great meal hiding in your house!

No Food In the House?

Low Carb Stuffed Mushrooms

It came time for lunch today and I started to think about what to cook. I looked in the refrigerator and thought, "I have got to get to the grocery store. I have no food in this house!" (How many times have we all done this?) Not wanting to get dressed and fight the crowds at the store, I decided to get creative! The random "staple" ingredients in my refrigerator led to the creation of this variation on Stuffed Mushrooms.

Ingredients:
10 med white mushroom caps
1 lrg boiled egg white
1 slice mozzarella
1/2 cup broccoli florets
3 green olives
Olive Oil
Salt and Pepper

Preparation:
1. Wash the mushrooms and remove the stems.
2. Lightly cover the outside of the mushroom caps with olive oil.
3. With a large boiled egg, separate the white from the yellow.
    Finely chop the white. Salt and pepper to taste.
4. Finely chop 1/2 cup of broccoli florets.
5. Quarter 3 green olives.

Instructions:
1. Place the mushroom caps onto a baking sheet.
2. Fill the mushroom caps with the egg whites, broccoli, and green olives.
3. Place a piece of the mozzarella on top the stuffed mushroom caps.


4. Bake on 400 degrees for 9-12 minutes. (Time varies based on oven.)
5. Remove. Let cool. Enjoy!


This was a perfectly yummy and filling treat for lunch! 

This recipe can be customized in many many ways! Next time you look in the refrigerator get creative!

*The carbs come mainly from the mushrooms. The smaller the mushroom, the fewer the carbs.

Low Carb High Calorie

Turkey Cheese Casserole

I am doing phase I (or induction) on the Atkins diet. They have tons of recipes on their website and a wonderful App that I use to track my carb, calorie, protein, fiber, and fat intake everyday. My carb goal is 20 a day and my calorie goal is between 1200-1300.

The problem I keep having is balancing high carb foods and high calorie foods with low carbs. I have started getting creative with existing recipes and creating some of my own. Below is my latest creation! It is easy to adjust to your likes and preferences. Enjoy!

Ingredients:
3 Large Eggs
4 oz Boar's Head Turkey
5 Green Olives
6 Slices Mozzarella

Directions:
1. Spray a loaf pan with non stick spray
2. Scramble 3 eggs in a bowl.
3. Place a layer of turkey on the bottom of the loaf pan.
4. Place a layer of mozzarella on the turkey (This was 2 slices for me)
5. Slice up olives and scatter over the mozzarella (I used 2.5 olives)
6. Repeat steps 3-5.
7. Place your last layer of turkey over the mozzarella.
8. Poor the three scrambled eggs over top of the casserole
9. Bake at 350 degrees for 20 minutes or until the eggs are fully cooked.


Intro to Me and My Blog

Hi Guys!

I have had great success in the past with Atkins and low-carb but I wasn't doing it as a life style. I drank a lot of shakes and pre-made bars. I didn't get to enjoy the food I was eating and was craving the food I missed. This time around I am going to be doing it right! Sharing recipes I have found and sharing some recipes of my own!
