Low Carb High Calorie

Turkey Cheese Casserole

I am doing phase I (or induction) on the Atkins diet. They have tons of recipes on their website and a wonderful App that I use to track my carb, calorie, protein, fiber, and fat intake everyday. My carb goal is 20 a day and my calorie goal is between 1200-1300.

The problem I keep having is balancing high carb foods and high calorie foods with low carbs. I have started getting creative with existing recipes and creating some of my own. Below is my latest creation! It is easy to adjust to your likes and preferences. Enjoy!

Ingredients:
3 Large Eggs
4 oz Boar's Head Turkey
5 Green Olives
6 Slices Mozzarella

Directions:
1. Spray a loaf pan with non stick spray
2. Scramble 3 eggs in a bowl.
3. Place a layer of turkey on the bottom of the loaf pan.
4. Place a layer of mozzarella on the turkey (This was 2 slices for me)
5. Slice up olives and scatter over the mozzarella (I used 2.5 olives)
6. Repeat steps 3-5.
7. Place your last layer of turkey over the mozzarella.
8. Poor the three scrambled eggs over top of the casserole
9. Bake at 350 degrees for 20 minutes or until the eggs are fully cooked.

Hi Guys!

I have had great success in the past with Atkins and low-carb but I wasn't doing it as a life style. I drank a lot of shakes and pre-made bars. I didn't get to enjoy the food I was eating and was craving the food I missed. This time around I am going to be doing it right! Sharing recipes I have found and sharing some recipes of my own!
